The 7-in. Usuba Knife is a square-tipped, broad bladed Japanese knife that is designed to cut vegetables. This knife features a single-sided grind on the cutting edge, along with a hollow curve on the opposite side of the blade.
Bunmei Knives are traditional Japanese knives made with slip-resistant wooden handles. The molybdenum/vanadium stainless steel blades are extremely sharp and the knives are extensively used by Japanese sushi chefs
