The wide blade also makes it possible to scoop cut pieces and transfer them from the cutting board to awaiting pots or bowls. The sharp blade is constructed of molybdenum vanadium stainless steel with a X50 Cr 54 Rockwell hardness. The blade is sharpened, polished, and mounted with a natural Honoki wood handle and meguki bamboo pin inserted into the side of the handle, as in the ancient process of the Samurai-sword.
