Crushing the corns leads to the flavor being released very quickly as the peppering oils are squeezed out of the corns. This is because as soon as the oil is exposed to the air it will start to oxidize and evaporate thus releasing its flavor. The best method for lasting flavor is to strip the corns. The flavor is released more slowly as it is breaking up the peppercorns into smaller pieces, not squeezing the oils out. Once the corns are broken into smaller pieces the flavor is released either whilst the food is cooking or whilst you are chewing.
