The Chef's Choice Model 312: Electric Black 2-stage Knife Sharpener is based on micron sized diamonds to create a "better than factory" sharpness. Stage 1 sharpens using 100% fine diamond abrasives. Stage 2 ultrahones the edge using advanced micron size 100% diamond technology. The resulting edge develop and unusually sharp and durable edge. Diamonds are the hardest known material that can sharpen knives made of any kind of metal such as high carbon, stainless steel and super alloy steels.
