The Chef's Choice Model 112: Electric Black 3-stage Knife Sharpener is based on micron sized diamonds to create a strong triple bevel edge which is ultrahoned to "better than factory" sharpness. Stage 1 creates a primary edge bevel while Stage 2 sharpens with finer diamonds to establish a small second bevel along the edge. Stage 3 uses ultrafine diamonds to hone a third micro bevel at the edge. The resulting edge comes out strong, durable and razor sharp. Diamonds are the hardest known material that can sharpen knives made of any kind of metal such as high carbon, stainless steel and super alloy steels.
