The laser controlled edge is sharp, and stays sharper longer. In addition, TWIN Gourmet knives use J.A. Henckels’ Friodur ice hardening for corrosion resistance, a process that also contributes to cutting-edge retention. TWIN Gourmet knives feature a traditional 3-rivet design handle for strength and durability. These black, Novodur handles are smooth and comfortable to use. The fully visible tang is bonded to the handle, providing proper balance.
