The Girolle originale, entirely designed and made in Switzerland, comes with a metal shaping knife and a base plate of genuine, solid maple wood. For reasons of environmental protection we exclusively use 100% FSC certified wood. The central shaft and the shaping knife (assembled in our workshop in Lajoux) are made of stainless steel in an alloy specially adapted to kitchen usage.

The Girolle has already been used for many years in the restaurant trade, particularly for accenting cheese platters and appetizers with exquisite cheese flowers. Designed for use with a special cheese from Switzerland, know as "Tete de Moin" cheese (or Monk's Head); this full fat cheese has the perfect consistency to create unique cheese rosettes.
