Miyabi knives are forged from high quality stainless steel, with same hardness of all Twin German steel knives. These knives have undergone a scalpel-like sharpening using the traditional "honbazuke" honing technique. The unique, asymetric blades are designed for Japanese food preparation; the enhanced cutting angle prevents food from sticking.
