Description

The Miyabi Birchwood SG2 Santoku Knife is designed for mincing, chopping and slicing fruits and vegetables. Miyabi Birchwood SG2 knives are made from the finest materials delivering high-performance and are exquisite. The blade consists of SG2 micro-carbide steel, one of the hardest high-performing steels on the market creating a 63 Rockwell Hardness. The Damascus clad features 50 layers on each side of the knife blade totaling 101-layers including the SG2 steel core. The blades are Cryodur ice-hardened for enhanced hardness, flexibility and are corrosion resistant. Each knife is hand-finished in the Honbazuke 3-step method, creating a beautiful mirror polished edge. A Katana edge is featured on each knife blade, reminiscent of the legendary Japanese swords, known for superb craftsmanship. The blade is adorned with a Birchwood traditional D-shaped style handle with an intricate mosaic pin, accented with two red spacers and stainless engraved end cap. A prized material for knife handles, Karelian Birch is also the only wood ever used in a Faberge egg. Handcrafted in Seki, Japan with a lifetime warranty.

    Great knife

    I am very happy with this knife. I was considered between getting this knife and the rocking Santoku. I am very happy with my choice because I can still do a rocking motion very comfortably and I am very satisfied with this knife.

    It’s sharpness is only exceeded by it’s beauty

    I have a set of Bob Kramer Damascus and the handles were too large for my wife. So I have purchased her several of the Miyabi Birchwood knifes. And I have to say I prefer the Miyabi. It is also sharper out of the box. Kramer’s are awesome but the Miyabi is like razor blade sharp. And lastly Cutlery and more hands down is the BEST place to purchase any kitchen ware.     Christmas gift that was over the top.

    The wife loves everything about her new Miyabi SG2-7. Number one was the weight and balance of the knife. The beauty of the Birchwood grip and the over all appearance of the blade give her a great deal of pride of ownership. It is a great gift.
