The Victorinox Daniel Humm Steak Knife was designed in part by Chef/Owner, Daniel Humm of New York's Eleven Madison Park and NoMad restaurants. The handle, a resilient composite linen material called Micarta, features a stunning cross-grain pattern and is perfectly integrated onto the high-carbon stainless steel blade. The composition of the blade employs a very similar manufacturing process to the well-known red Swiss Army Knives and was selected because of its superior edge retention and surgical-grade slicing ability.
