Each knife is precision forged, made from one solid piece of high-carbon German stainless steel which results in a 40 step process and 58 Rockwell Hardness. The new Precision Edge Technology (PEtec) enhances the blades sharpness by 20%, and will stay sharp twice as long. Each knife features a computer controlled cutting edge to ensure the final edge of the blade is precise and uniform from the tip to the heel of the knife. Wusthof knives feature a 14° cutting edge on each side. This new angle and more tapered cutting edge reduces the drag when slicing through foods, allowing for seamless effortless cutting. The Wusthof Hand-Held Santoku Knife Sharpener works easily. Place sharpener on a flat work surface. Hold the sharpener with one hand and the knife handle with the other. Insert the knife blade fully into the slot at a 90° angle to the sharpener. Apply moderate downward pressure on the blade while pulling the knife toward you through the appropriate notch. Repeat this action, always pulling the blade from heel to tip (never back and forth) through either ceramic notch. A reasonably sharp blade may only require light honing in the fine ceramic notch. The first stage ceramic is intended for dull edges that require more maintenance.
