    Useful addition to my daily food prep

    My most used knife is a granton blade santoku and for more delicate work a longer damascus blade chef's knife. This fits nicely in between. It's not as thin as the chef's knife, but thinner than the santoku. I find it useful as a go-to knife where I could use either of the others. It's light weight but well balanced. It fits the hand nicely for a pinch grip, It arrives very sharp and so far (as expected) holds its edge. It's a nice looking knife as well.

    So far so good

    I actually bought two of these knives at the same time. Though, one was not for me. A chef friend of my wife's broke her chef's knife smashing a garlic clove to get the skin off it. She knew I had an appreciation for knives and a rudimentary understanding of sharpening them. Actually has trusted me to sharpen her knives. :-)

    I had purchased some fillet knives at Christmas time from Cutlery and more, so I was on the email list from that When the Enso Santoku knife came through for a sale price. At that point I had never heard of Enso knives. Typically, I'm more a function over feature and aesthetically pleasing doodads added on. So, I mostly run Victorinox kitchen knives with fibrox handles. Relatively okay knife at a reasonable price and I’m not afraid to use it.

    When I read the specs on the Enso knife; SS Damascus wrapped over VG-10 core, hammered finish, black canvas micarta handle. I was intrigued. I figured the hammered finish had a functional purpose as it would act somewhat like grantons to keep tomatoes from sticking to the blade. The damascus wrap would help the blade to be more durable like a softer steel while the rockwell 61C center VG-10 would hold and edge. The Micarta would have the warm feeling of wood, but would hopefully hold up better than wood when getting wet from washing and such.

    The knife, at the sale price, was coming in a hair under what I would consider a price point so expensive I might be afraid to use it. Yeah, I'm cheap…

    This is my third Enzo knife!

    I’ve been a huge Wusthof classic fan for years and thought l had the best knives. Not so—at least for me. My Enzos have sharpened my knife skills significantly and add great enjoyment to what could be mundane tasks. I’m a fan.

    Future chef loves it

    This was a gift for my granddaughter who is in school to be a chef. She loved the knife and replaced one in her kit with it
