Description

The Mcusta Zanmai Kuronami Sujihiki Slicing Knife is designed for slicing through boneless protein. The short height of the blade creates less friction when slicing and the blade draws through fish and meat effortlessly. Mcusta Zanmai Kuronami features a coreless steel constructed of 71 alternating micro-layers of VG-10 and VG-2 with a highly polished Damascus pattern. 61° Rockwell blades display hardness, toughness, and flexibility for ultimate sharpness and long lasting edge retention. Mcusta Zanmai Kuronami features two alternating high quality steels rather than a thin core of one of the steels that is encased with lower quality stainless steel layers. The 9-12° blade angle is finished in Zanmai's perfect Hamaguri single bevel form, making it incredibly sharp and the ideal structure to cut food effortlessly. Engraved stainless steel end cap adds balance. The black pakkawood handle is accented with red spacers and a traditional Japanese decorative pin. Handcrafted in Seki city, Japan.
