In Japan, the kiritsuke is known as the master chef's knife. Designed for all the tasks for which you'd use a chef's knife, it works extremely well with vegetables, julienne, dice, and more. Can also be used for cleaning and portioning boneless proteins, particularly fish, and slices cooked proteins with grace and ease. The straight edge won't rock through cuts such as a traditional chef's knife.
The Shun Blue Steel Petty Knife is larger than a paring knife and smaller than a chef's knife, ideal for medium-sized tasks. Designed to clean silver skin from tenderloins and portions of boneless proteins with ease. Use it in hand to peel a potato, but then use the same knife to slice the potato for au gratin. Just the right size for sectioning citrus from a large grapefruit to a smaller lime. The longer blade means it's handy for board work, yet provides additional knuckle clearance. Of course, preventative maintenance is the best maintenance. So the first step in keeping your Shuns in top condition is the simple daily care we recommend: use proper cutting technique, cut on an appropriate surface, hand wash in mild detergent, dry thoroughly with an absorbent towel and especially along the thin cutting edge and allow to air-dry before storage. To catch any problems at their earliest stage, when they're easiest to correct, we recommend examining your knives whenever you use them. The sooner you catch a potential problem, the less of a problem it will be.
