Description

The Shun Classic Gokujo Boning/Fillet Knife Fillet is adept at two key kitchen chores. For boning, the narrow, sharp, curved blade gets in close to the bone making it easy to separate meat from bone. Even fibrous tissue is no match for Shun's extremely sharp edge. It's perfect for trimming the silver skin from a tenderloin or roast or even making your own cutlets. The narrow blade reduces the drag as you cut against the meat, so cutting is fast and easy. When it comes to filleting fish, the blade's length is just right to glide through the body of the fish, quickly removing bones and skin.<br /><br />The Shun Classic line features beautiful Damascus-clad blades with D-shaped ebony PakkaWood handles. The razor-sharp blades offer top performance. Shun's proprietary high-performance VG-MAX steel provides incredible edge retention. Blades are handcrafted of durable clad with Damascus stainless steel, ground and bead-blasted creating a flowing pattern of the layered steel. The result is a line of knives that are sharp, durable, and corrosion resistant, as well as beautiful to hold. Handcrafted in Seki, Japan with a limited lifetime warranty.

    Great boning knife

    I bought this knife for turkey prep this year. As expected from a Shun knife high quality and feel in your hand. As the description states it is not a flexible blade which is what I wanted.

    Shun Quality

    The blade is extremely sharp as expected from a Shun. I use it to process whole chickens easily. The curve of the blade provides the extra blade length in a short knife to get the job done quickly. No regrets purchasing this knife.

    Just what I hoped it would do.

    I found this knife to be exceptionally useful for all sorts of food prep and then delicate carving. Just the right size, weight and shape as well as being very sharp.

    Over the top all around.

    If you have never treated yourself to a sweet boning knife, you just won’t have a clue what this knife can do! The look and feel is only the beginning. It’s very sharp and seems like a laser when stripping bones. Has a unique sharpening angle, I use stones. I stepped up and am glad.
