The Yaxell Ketu Curved Boning Knife is perfect for trimming the silver skin from a tenderloin or roast or even making your own cutlets. The narrow blade reduces the drag as you cut against the meat, so cutting is fast and easy. When it comes to filleting fish, it's just right to glide through the body of the fish, quickly removing bones and skin. Yaxell Ketu is constructed of 3-layer stainless steel with a Japanese SG2 powder steel core. The handle is made of black beech pakkawood which provides outstanding stability and balance. The handle also is unique to a traditional Japanese Samurai family crest. The attractive embossed end-cap of the handle is made of stainless steel.
