Set includes a Yaxell Mon 4.75-inch Utility Knife and 8-inch Chef's Knife. The Yaxell Mon Prep Knife is designed for peeling and chopping vegetables and fruit, slicing meats and cheeses, butterflying chicken breasts, deveining shrimp and much more. The Chef's Knife is designed for slicing, dicing, and chopping a full range of fruits, vegetables, and more. With its curved belly, the Chef's knife can be gently rocked through fresh herbs or spices to produce a very fine mince.<br /><br />The Yaxell Mon series is constructed from 3-layer Japanese Cobalt Molybdenum Vanadium VG10 superior stainless steel clad by high quality stainless steel from both sides. The handle is made of black canvas handle with two stainless steel rivets. The canvas material is dyed black and brilliantly polished to last for decades. The engraved end-cap of the handle is made of 18/10 stainless steel, which provides outstanding stability and balance.

    Fantastic knives for the money

    These are the first Japanese knives I have purchased and I am nothing but impressed! They are light, thin and extremely sharp(be careful). You can definitely see the quality and craftsmanship went to produce these knives. I have purchased the Yaxell mon line which is more on the budget friendly side yet you get the high quality blade and supreme sharpness. My only observation is that the handles of the knives are thinner than I used to. I have big hand thus prefer thicker handle for a better gip

    Wonderful knife set

    These are my first genuine, high-end kitchen knives. Most of my life I've been using hand me downs, and knives scavenged from department store knife sets. I decided to treat myself to some "real" knives, and am I glad I did.

    Considering the price I think they were a steal, and an excellent investment for an average home cook such as myself. The quality seems great. They have a nice heft, and the built quality is superb. The tolerances are impressive, and running my fingernail along the handle I am unable to feel the seams between the handle material and the rivits, or metal portions of the knife. Extremely sharp too! I sharpen my own knives and I'm worried I will never be able to re-achieve the sharpness these came with from the factory.

    The chef knife meets all my needs, and is what I was actually shopping for, but the "utility" knife is turning out to be my favorite. For all practical purposes it is just a much smaller version of the chefs knife, being shaped nearly identically but at just half the size. I use it all the time, and best of all it's the perfect size for a child to hold. When I cook with my daughter she uses the utility knife(she calls it her knife), while I use the larger chefs knife.
